Jamaican Curry Goat

Ingredients
- 3 g goat meat
- 2.5 tbsp jamaican curry powder
- 0.5 g ginger
- 0.5 tsp all-purpose seasoning
- 0.25 tsp allspice
- 1 g onions
- 6 pcs garlic
- 3 tbsp thyme
- 2 g oil
- 1.25 ml water
- 1 pcs scotch bonnet
- 1 pcs russet potato
- 1 g salt
- 1 pcs peppers
Instructions
- Clean the goat meat using a mixture of vinegar and water.
- Rub the goat meat with 1 ½ tablespoons of curry powder, along with all-purpose seasoning, ground ginger, allspice, chopped onion, minced garlic cloves, and thyme.
- Let the goat meat marinate for a minimum of 4 hours or overnight.
- Take out the onion and garlic from the goat meat and set them aside.
- Turn on the electric pressure cooker and select the high sauté setting.
- Pour oil into the pressure cooker.
- Add the goat meat to the pressure cooker and sear it for approximately 2-3 minutes on each side.
- Take the goat meat out of the cooker insert.
- Pour in 1 tablespoon of oil along with the remaining curry powder into the pressure cooker.
- Sauté for roughly 10 seconds.
- Put the onions and garlic back into the pressure cooker.
- Cook the onions and garlic until they become tender, which should take about 4 minutes.
- If the onions appear dry, add a splash of water and keep sautéing.
- Add the goat meat back into the pressure cooker along with some water.
- Secure the lid on the pressure cooker.
- Cook on high pressure for 40 minutes.
- Let the pressure release naturally for 10 minutes.
- Manually release any remaining pressure.
- After all pressure has been released, carefully open the pressure cooker.
- Switch the cooker back to sauté mode for 10-15 minutes.
- Incorporate the potatoes and a whole scotch bonnet pepper.
- Cook until the potatoes are tender.
- Remove the scotch bonnet pepper.
