- 1 g onions
- 2 pcs carrot
- 3 cup fish stock
- 3 ml water
- 4 g potatoes
- 3 pcs bay leaf
- 1 pcs cod
- 1 g salmon
Instructions
- In a medium saucepan, warm the olive oil over medium-high heat.
- Incorporate the onions and sauté, stirring occasionally until they begin to caramelize.
- Introduce the carrots and continue cooking until they start to become tender, which should take around 4 minutes.
- Pour in the stock, add water, potatoes, bay leaves, and black peppercorns.
- Add salt for seasoning and allow the mixture to reach a boil.
- Lower the heat, cover the pot, and let it cook for 10 minutes.
- Stir in the millet and let it cook for an additional 15 minutes until both the millet and potatoes are tender.
- Carefully fold in the fish cubes.
- Stir the mixture and let the soup simmer.
- Make sure the fish is cooked just right; it's ready when the flesh turns opaque and flakes with ease.
- Before serving, sprinkle the soup with freshly chopped dill or parsley as a garnish.
