Lamb Rogan Josh – a flavorful Indian dish featuring tender lamb simmered in a rich, spiced sauce.

Ingredients
- 2 pcs onion
- 4 pcs sunflower oil
- 4 pcs garlic
- 1 g ginger
- 2 tbsp madras paste
- 2 tbsp paprika
- 1 pcs cinnamon stick
- 6 tsp cardamom
- 2 pcs bay leaf
- 1 tbsp tomato purée
- 1 g lamb
- 150 ml greek yogurt
- 1 tsp coriander
Instructions
- Place the onions in a food processor.
- Pulse the onions until they are finely minced.
- Warm the oil in a large, heavy-bottomed pot.
- Incorporate the minced onions into the pot.
- Seal the pot with a lid.
- Sauté the onions, stirring from time to time, until they turn golden and tender.
- Introduce the garlic and ginger to the pot.
- Cook the mixture for an additional 5 minutes.
- Add the curry paste, all the spices, and the bay leaves into the pot.
- Incorporate the tomato purée into the pot.
- Mix thoroughly over the heat for approximately 30 seconds.
- Introduce the meat into the pot.
- Add 300ml of water.
- Stir to combine all the ingredients.
- Reduce the heat.
- Stir in the yogurt.
- Cover the pot.
- Allow to simmer gently for 40-60 minutes until the meat is soft and the sauce has thickened.
- Serve the dish garnished with coriander.
- Accompany with plain basmati or pilau rice.
