  1. Place the onions in a food processor.
  2. Pulse the onions until they are finely minced.
  3. Warm the oil in a large, heavy-bottomed pot.
  4. Incorporate the minced onions into the pot.
  5. Seal the pot with a lid.
  6. Sauté the onions, stirring from time to time, until they turn golden and tender.
  7. Introduce the garlic and ginger to the pot.
  8. Cook the mixture for an additional 5 minutes.
  9. Add the curry paste, all the spices, and the bay leaves into the pot.
  10. Incorporate the tomato purée into the pot.
  11. Mix thoroughly over the heat for approximately 30 seconds.
  12. Introduce the meat into the pot.
  13. Add 300ml of water.
  14. Stir to combine all the ingredients.
  15. Reduce the heat.
  16. Stir in the yogurt.
  17. Cover the pot.
  18. Allow to simmer gently for 40-60 minutes until the meat is soft and the sauce has thickened.
  19. Serve the dish garnished with coriander.
  20. Accompany with plain basmati or pilau rice.
