  1. Begin by setting the oven temperature to 350˚F.
  2. In a medium-sized bowl, combine graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon.
  3. Reserve approximately 2 tablespoons (30 mL) of the crust mixture for later use.
  4. Press the remaining crust mixture firmly into the base and up the sides of a 9-inch deep-dish pie plate.
  5. Bake the crust for about 10 minutes until it develops a slight golden color.
  6. In another bowl, mix together milk, granulated sugar, cornstarch, egg yolks, vanilla extract, and salt.
  7. Cook the mixture over medium heat, stirring continuously, until it starts to bubble and thickens to a pudding-like consistency.
  8. Allow the custard filling to cool down.
  9. In the bowl of a stand mixer or a large bowl with an electric mixer, whip egg whites, granulated sugar, and cream of tartar.
  10. Keep beating until the mixture forms stiff, glossy peaks.
  11. Pour the cooled custard filling into the baked crust.
  12. Spread a generous layer of meringue over the filling, creating peaks.
  13. Sprinkle the reserved crumb mixture on top of the meringue.
  14. Place the pie in the oven that has been preheated.
  15. Bake until the meringue is golden brown, which should take about 10 minutes, while keeping an eye on it.
  16. Refrigerate the pie to chill.
  17. For optimal taste, enjoy the pie within a few hours after baking.
