Flapper Pie

Ingredients
- 1.5 cup graham cracker crumbs
- 6 g butter
- 0.5 g sugar
- 0.5 tsp cinnamon
- 2.5 ml milk
- 0.5 g sugar
- 0.25 tbsp cornstarch
- 3 pcs egg yolks
- 1 ml vanilla extract
- 0.25 g salt
- 3 pcs egg white
- 0.25 g sugar
- 0.25 tsp cream of tartar
Instructions
- Begin by setting the oven temperature to 350˚F.
- In a medium-sized bowl, combine graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon.
- Reserve approximately 2 tablespoons (30 mL) of the crust mixture for later use.
- Press the remaining crust mixture firmly into the base and up the sides of a 9-inch deep-dish pie plate.
- Bake the crust for about 10 minutes until it develops a slight golden color.
- In another bowl, mix together milk, granulated sugar, cornstarch, egg yolks, vanilla extract, and salt.
- Cook the mixture over medium heat, stirring continuously, until it starts to bubble and thickens to a pudding-like consistency.
- Allow the custard filling to cool down.
- In the bowl of a stand mixer or a large bowl with an electric mixer, whip egg whites, granulated sugar, and cream of tartar.
- Keep beating until the mixture forms stiff, glossy peaks.
- Pour the cooled custard filling into the baked crust.
- Spread a generous layer of meringue over the filling, creating peaks.
- Sprinkle the reserved crumb mixture on top of the meringue.
- Place the pie in the oven that has been preheated.
- Bake until the meringue is golden brown, which should take about 10 minutes, while keeping an eye on it.
- Refrigerate the pie to chill.
- For optimal taste, enjoy the pie within a few hours after baking.
