- 0.5 cup dark rum
- 1 cup raisins
- 1 ml vanilla extract
- 14 pcs condensed milk
- 2 cup brown sugar
- 0.25 tsp cinnamon
- 0.125 tsp allspice
- 2 cup heavy cream
- 1 g salt
Instructions
- In a small saucepan, warm the rum over medium heat until it is heated through, but ensure it does not reach a boil.
- Take the saucepan off the heat.
- Add the raisins and vanilla extract to the warm rum and mix well.
- Allow the mixture to rest for a minimum of 30 minutes.
- Once the raisins have soaked, drain the excess rum, keeping ¼ cup of it aside.
- Set the reserved ¼ cup of rum aside for incorporation into your ice cream base.
- In a large mixing bowl, combine the sweetened condensed milk, dark brown sugar, cinnamon, allspice, salt, and the reserved ¼ cup of rum.
- Mix the ingredients until the brown sugar has completely dissolved.
- In another bowl, use an electric mixer to whip the cold heavy cream until stiff peaks are formed.
- Carefully fold the whipped cream into the condensed milk mixture until everything is thoroughly mixed.
- Take care to avoid deflating the whipped cream during the folding process.
- Gently incorporate the drained rum-soaked raisins to ensure even distribution.
- Transfer the mixture into a loaf pan or any freezer-safe container.
- Level the top of the mixture for an even surface.
- Cover the container with plastic wrap or an airtight lid.
- Place the mixture in the freezer for a minimum of 6 hours, or until it is solid.
- Before scooping, allow the ice cream to sit at room temperature for 5–10 minutes for optimal texture.
