Ingredients
- 200 g flour
- 2 tsp yeast
- 0.125 tsp salt
- 120 ml water
- 1 tbsp cornflour
- 4 tbsp tomato concentrate
- 2 tsp oregano
- 200 g mushrooms
- 200 g mozzarella
- 1 tsp chilli flakes
Instructions
- Preheat the oven to 240°C (464°F).
- Mix 200 g flour with yeast, a pinch of salt and enough water to kneed into a smooth dough; cover with a cloth and let rise in a warm place until puffy.
- Divide the risen dough into 4 equal balls and roll each ball into a thin round with a rolling pin.
- Heat a large frying pan over high heat and sprinkle cornflour over the pan base.
- Place one flattened dough round into the hot pan.
- Quickly spread rich tomato concentrate over the base, sprinkle oregano, add sliced mushrooms, top with one quarter of the mozzarella for that pizza, and add chilli flakes to taste.
- Transfer the pan (or the pizza to a baking tray if the pan is not ovenproof) into the preheated oven and bake 7–10 minutes at 240°C (464°F), until the cheese is browned.
- Remove from the oven and serve immediately; repeat the pan/oven steps for the remaining dough rounds.
