  1. Heat the oil in a skillet.
  2. Sauté the sliced onion until it turns golden.
  3. Place the tonkatsu in the center of the skillet.
  4. Combine the dashi, soy sauce, mirin, and sugar in a bowl.
  5. Pour three-quarters of this mixture around the tonkatsu.
  6. Allow it to simmer for a few minutes to thicken the sauce and warm the tonkatsu.
  7. Pour the beaten eggs around the tonkatsu.
  8. Cook for 2-3 minutes until the eggs are set but slightly runny.
  9. Split the rice into two bowls.
  10. Distribute half of the egg and tonkatsu mixture onto each bowl.
  11. Garnish with chives.
  12. Serve right away, adding a splash more soy sauce if you like.
