Griddled flatbreads
Griddled flatbreads — a delightful Turkish side dish.

Ingredients
- 250 g wholemeal flour
- 250 g bread flour
- 15 g yeast
- 1 g sugar
- 2 g olive oil
Instructions
- Pour the flours into a food processor.
- In the food processor, add the yeast, sugar, and 1 teaspoon of salt.
- Blend the ingredients thoroughly in the food processor.
- Add 350ml of warm water and the oil into the processor.
- Process the blend until it becomes a soft dough.
- Knead the dough for 1 minute.
- Allow the dough to rise until it has doubled in volume, which will take around 1 hour.
- Pulse the dough a few times in the food processor to release the air.
- Transfer the dough onto a floured work surface.
- Divide the dough into two equal parts.
- Roll out one portion of the dough to form a rectangle approximately 20 x 40cm.
- Use a large sharp knife to trim the edges of the rolled dough.
- Slice the trimmed dough into eight squares, each measuring 10cm.
- Prepare a large tray or two baking sheets by lining them with non-stick paper.
- Place the bread squares in a single layer on the tray.
- Repeat the process of rolling, trimming, and cutting with the second half of the dough.
- Let the arranged dough sit in a warm area for about 30 minutes until it begins to rise.
- Directly place the bread onto the BBQ racks.
- Cook the bread for a few minutes until they puff up.
- Turn the bread over and cook the other side.
- Transfer the cooked bread into a basket.
- Serve the bread alongside the dips.
