Ingredients
- 1.5 ml water
- 2 pcs carrot
- 5 g olive oil
- 1 g salt
- 0.5 g black pepper
- 0.5 tsp ground cinnamon
- 0.5 tsp ground cumin
- 3 clove crushed garlic
- 0.5 pcs thyme
- 1 pcs bay leaf
- 1 tbsp lemon juice
Instructions
- Set a steamer basket inside a saucepan and pour in 1 1/2 cups of water (or just enough so the water reaches just under the steamer); cover and heat over high until it boils.
- Place the sliced carrots in the steamer, lower the heat to medium, replace the lid and steam until they’re tender but still hold their shape, about 4 to 6 minutes depending on thickness.
- Reserve 1/2 cup of the steaming liquid.
- Warm the olive oil in a skillet over medium heat.
- Turn the heat down to low, add the salt, pepper, cinnamon, cumin, minced garlic and thyme, and cook, stirring frequently, until the garlic and spices are fragrant, about 10 minutes.
- Stir in the reserved 1/2 cup of cooking liquid and the bay leaf, cover the skillet and let it simmer for 20 minutes.
- Add the steamed carrots to the skillet, toss to coat them well in the spice mixture, and cook until heated through, about 2 to 3 minutes.
- Finish with a squeeze of lemon juice and remove the bay leaf before serving.
