- 0.5 g onions
- 1 g olive oil
- 125 g butter
- 3 g onions
- 1 pcs garlic
- 500 ml tinned tomatos
- 3 g parsley
- 1 tsp lime juice
- 1 pcs to taste salt
- 1 pcs to taste pepper
- 250 ml water
- 1 pcs to taste red pepper paste
- 1 pcs garnish parsley
Instructions
- Halve the breadfruit, scoop out the seeds from the center, and peel off the skin.
- Put the peeled breadfruit into a pot with the half small onion, 1 tablespoon olive oil and enough salted water to cover; bring to a boil over high heat, cook until the fruit is tender, then drain.
- As the breadfruit is cooking, melt 4 oz (125 g) of butter in a skillet.
- Add three medium onions, sliced into rings, to the melted butter and brown them lightly.
- Stir in 1 tablespoon finely chopped garlic, the drained and sliced can of whole tomatoes, 1/4 cup (or 3 tablespoons) chopped parsley, 1 tablespoon lime juice, and season with salt, pepper and hot pepper sauce to taste; sauté for another two minutes.
- Pour in 1 cup (8 oz/250 ml) water, bring the mixture to a boil, then lower the heat and simmer 5–10 minutes to develop the butter sauce.
- Take the cooked breadfruit from the pot, let it cool briefly, and then slice it.
- Arrange the slices of breadfruit on a serving platter.
- Ladle the butter-tomato sauce over the arranged breadfruit, sprinkle with chopped fresh parsley, and serve.
