  1. Score the tops of the scallops in a crisscross pattern to help them sear evenly.
  2. Season with salt, pepper, lemon zest, and a pinch of five-spice powder.
  3. Drizzle with sesame oil and a little olive oil to coat the surface.
  4. Move the scallops gently on greaseproof paper to arrange.
  5. Heat a pan until hot and add a little olive oil.
  6. Add the scallops to the hot pan and sear quickly.
  7. Add whole chilies and toss to distribute heat.
  8. After about 1 minute, add crushed garlic, a tiny knob of butter, and honey.
  9. Squeeze lemon juice from half a lemon over the scallops for balance.
  10. Cook for a total of about 3.5 minutes and serve immediately.
