Scallops with lemon and spice
A quick, elegant scallop dish with lemon zest, garlic, chili, honey and five-spice.

Ingredients
- 12 pcs scallops
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp lemon zest
- 0.25 tsp five-spice powder
- 1 tsp sesame oil
- 1 tbsp olive oil
- 1 pcs chilies
- 2 pcs garlic
- 0.5 tbsp butter
- 1 tsp honey
- 5 ml lemon juice
Instructions
- Score the tops of the scallops in a crisscross pattern to help them sear evenly.
- Season with salt, pepper, lemon zest, and a pinch of five-spice powder.
- Drizzle with sesame oil and a little olive oil to coat the surface.
- Move the scallops gently on greaseproof paper to arrange.
- Heat a pan until hot and add a little olive oil.
- Add the scallops to the hot pan and sear quickly.
- Add whole chilies and toss to distribute heat.
- After about 1 minute, add crushed garlic, a tiny knob of butter, and honey.
- Squeeze lemon juice from half a lemon over the scallops for balance.
- Cook for a total of about 3.5 minutes and serve immediately.
