Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the ground pork or chicken and cook, using a spatula or wooden spoon to break it into small pieces, until no longer pink, about 6 to 8 minutes.
  2. Stir in the garlic, ginger, carrot, scallions, and cabbage. Cook, stirring frequently, until the cabbage has wilted and softened, about 3 to 4 minutes.
  3. Season the mixture with soy sauce and rice wine vinegar, remove the skillet from the heat, and allow the filling to cool.
  4. Lay one egg roll wrapper on a dry work surface with a corner pointing toward you (diamond orientation).
  5. Spoon roughly 1/4 cup of the cooled filling into the center of the wrapper.
  6. Wet your fingertips and run them around the edges of the wrapper to moisten the border.
  7. Fold the left and right corners over the filling, fold up the corner nearest you, then roll the wrapper away from you into a tight cylinder; place the assembled egg roll on a plate and repeat until all the filling is used (about a dozen).
  8. For air-frying: arrange the assembled egg rolls in a single layer in the air fryer basket without touching and lightly brush or spray them with oil.
  9. Set the air fryer to 350°F and cook the egg rolls for 6 to 7 minutes. Flip them, brush or spray the exposed sides with oil, and cook another 4 to 5 minutes until golden brown and crispy.
  10. Alternative pan-fry method: pour oil into a medium, high-sided skillet to a depth of about 1/2 inch and heat over medium-high until the oil reaches 350°F.
  11. Carefully add the egg rolls to the hot oil without overcrowding and fry 3 to 4 minutes, flip them, and fry another 3 to 4 minutes until golden brown and crispy.
  12. Remove the cooked egg rolls from the oil or air fryer and let them drain and cool on a few paper towels.
  13. Serve the egg rolls immediately while they are hot and crispy.
