  1. Place the fish fillets next to each other on a large piece of foil.
  2. Sprinkle the ginger, garlic, chili, and lime zest over the fish fillets.
  3. Squeeze lime juice over the fish fillets.
  4. Arrange the pak choi pieces around and on top of the fish.
  5. Drizzle soy sauce over the pak choi.
  6. Fold the foil loosely to create a packet, ensuring there is room at the top for steam to escape.
  7. Steam the packet for 15 minutes.
  8. If a steamer is unavailable, set the parcel on a heatproof plate above a pot of gently boiling water.
  9. Cover the pot with a lid and steam the packet.
