Broccoli & Stilton soup
Broccoli and Stilton Soup - a classic British starter.

Ingredients
- 2 pcs rapeseed oil
- 1 pcs onion
- 1 pcs celery
- 1 g leek
- 1 g potatoes
- 1 tbsp butter
- 1 ml vegetable stock
- 1 g broccoli
- 140 g stilton cheese
Instructions
- Begin by warming the rapeseed oil in a spacious saucepan.
- Introduce the onions into the saucepan.
- Sauté the onions over medium heat until they become tender.
- If the onions begin to brown, add a small amount of water.
- Incorporate the celery, leek, potato, and a piece of butter into the saucepan.
- Mix the ingredients until the butter has completely melted.
- Place a lid on the saucepan.
- Let the contents cook gently for 5 minutes.
- Take off the lid from the saucepan.
- Add the stock to the mixture.
- Include any chunky pieces of broccoli stalk into the saucepan.
- Simmer the mixture for 10 to 15 minutes until all vegetables are tender.
- Add the remaining broccoli to the saucepan.
- Continue cooking for an additional 5 minutes.
- Carefully transfer the contents to a blender.
- Blend the mixture until it reaches a smooth consistency.
- Fold in the stilton, leaving some small lumps intact.
- Season the soup with black pepper.
- Serve the soup hot.
