Gambas al ajillo

Ingredients
- 12 g king prawns
- 3 pcs garlic cloves
- 100 g olive oil
- 3 tsp cayenne pepper
- 1 g parsley
Instructions
- Remove the shells from the prawns, keeping the tails on.
- With a cocktail stick, extract the digestive tracts from the prawns.
- If you prefer, you can keep the prawns in their shells while using a frying pan.
- Lightly season the prawns with some sea salt.
- Combine the garlic, olive oil, and chillies in a flameproof terracotta pot or frying pan.
- Place the pot or pan over high heat.
- Allow the garlic to become lightly golden.
- Introduce the prawns into the pot or pan.
- Sauté the prawns for 1-2 minutes on each side until they turn a light pink.
- Garnish the cooked prawns with chopped parsley.
- Add freshly ground black pepper to the prawns.
- Serve the prawns right away.
- If using a terracotta pot, carefully bring it to the table.
