Ingredients
- 200 g pork
- 1 pcs eggs
- 1 ml water
- 0.5 g salt
- 1 g sugar
- 10 ml soy sauce
- 10 tbsp starch
- 30 ml tomato puree
- 10 ml vinegar
- 1 tsp coriander
Instructions
- Break the egg into a bowl and carefully separate the white from the yolk.
- Cut the pork tenderloin into thin strips.
- Mix a pinch of salt, 1 teaspoon of starch, 2 teaspoons of light soy sauce and the reserved egg white to make the marinade.
- Toss the pork strips in the marinade and chill in the refrigerator for about 20 minutes.
- In another bowl, whisk the remaining starch with water and vinegar to form a thickening slurry; set aside.
- Pour enough cooking oil into a wok and heat it to around 190°C (375°F).
- Deep-fry the marinated pork strips in the hot oil until golden brown, then remove and drain on a plate.
- Leave a little oil in the wok, add the tomato sauce and white sugar, and cook until the oil and sauce meld.
- Add a splash of water and bring the sweet-and-sour sauce to a steady simmer.
- Return the fried pork to the wok and stir so each piece is evenly coated with the sauce.
- Pour in the prepared starch slurry and stir-fry until the sauce thickens and clings to the pork.
- Transfer the sweet-and-sour pork to a serving plate and garnish with coriander.
