  1. In a large skillet, warm 1 tablespoon of oil.
  2. Cook the onion and garlic on low heat for 5 minutes until they become tender.
  3. Transfer the softened onion and garlic to a spacious mixing bowl.
  4. In the mixing bowl, incorporate the chickpeas and spices.
  5. Using a fork or a potato masher, thoroughly crush the chickpeas and spices until they are completely broken down.
  6. Mix in the parsley or dried herbs, adjusting the seasoning according to your preference.
  7. Incorporate the egg into the mixture.
  8. Use your hands to combine the mixture thoroughly.
  9. Shape the mixture into 6 round balls.
  10. Press each ball down to form patties.
  11. In the skillet, add the remaining oil and heat it.
  12. Cook the falafels over medium heat for 3 minutes on each side until they are golden brown and firm.
  13. Enjoy the falafels either warm or cold alongside couscous, pitta bread, or a salad.
