Griddled aubergines with sesame dressing

Ingredients
- 2 pcs aubergines
- 2 g olive oil
- 250 ml greek yogurt
- 3 tbsp tahini
- 1 pcs garlic
- 1 pcs lemon
- 1 tsp coriander
- 1 pcs parsley
- 1 pcs mint
Instructions
- Coat each slice of aubergine with a bit of oil.
- Add seasoning to the aubergine slices.
- Preheat a griddle pan or barbecue.
- Cook the aubergine slices on one side for 2-3 minutes.
- Turn the aubergine slices over and grill for an additional 2-3 minutes until they are golden brown and soft.
- Combine yogurt with tahini, garlic, lemon juice, and herbs.
- Add seasoning to the yogurt mixture.
- Drizzle the yogurt dressing over the grilled aubergines.
- Garnish the dressed aubergines with additional herb leaves.
