Hotel spicy eggs
A delicious healthy start to the day

Ingredients
- 1 g olive oil
- 4 pcs eggs
- 100 g rocket
- 1 pcs avocado
- 1 g red finger chilli
- 0.25 g salt
- 0.25 g black pepper
Instructions
- The trick to this is having a frying pan (or pan) with a lid. Put a teaspoon of oil in the frying pan and heat until hot. Next turn the heat down to a low setting and break open and place the eggs in the frying pan. You should not hear a sizzling sound, if you hear them sizzle it is too hot. Now cover the pan with it's lid and allow to cook for 5 minutes if you want runny yolk.
- Wash and place some rocket on each plate as a base. While the eggs are cooking, cut an advocado open, remove the skin and take the pip out. Finally cut into small 1cm strips and lay on a plate.
- When the eggs are ready, place the eggs on top of the advocado. Cut a red finger chilli into slices and cover the eggs with this if you like them hot. Serve with salt and black pepper.
