Instructions

  1. Gather ingredients: 2 packs pork, 2 baguettes, salad (lettuce, tomato or similar) and any condiments you like (mayonnaise, chilli sauce, pickles).
  2. If the pork is frozen, thaw it in the fridge overnight or under cold running water until soft.
  3. Trim and slice the pork into thin strips or bite-sized pieces; pat dry with kitchen paper.
  4. Season the pork: sprinkle with salt and pepper and add chilli flakes or 15–30 ml chilli sauce to taste. Toss to coat evenly.
  5. Heat 15 ml oil in a frying pan over medium-high heat and cook the pork in a single layer until browned and cooked through, about 6–10 minutes. Check that the thickest pieces reach 63°C (145°F) internal temperature.
  6. Warm the baguettes in the oven at 180°C (356°F) for 5–8 minutes or toast them until crisp on the outside and warm inside.
  7. Split each baguette lengthwise, spread condiments on the cut sides, add salad leaves, then pile on the cooked spicy pork.
  8. Close the baguettes, cut to serve and eat immediately.
