  1. Start by placing the prawns into a pot.
  2. Pour in enough water to completely submerge the prawns.
  3. Bring the water to a boil and cook the prawns for 5 minutes.
  4. Drain the prawns, keeping the liquid, and set them aside.
  5. In a saucepan, heat 2 tablespoons of oil.
  6. Introduce the onion into the saucepan.
  7. Sauté the onion, stirring frequently, until it becomes soft.
  8. Incorporate the parsley, wine, tomatoes, garlic, and the remaining olive oil.
  9. Allow the mixture to simmer, stirring now and then, for roughly 30 minutes or until the sauce has thickened.
  10. As the sauce simmers, let the prawns cool until they are manageable.
  11. To remove the legs from the prawns, pinch them off.
  12. Take off the shells from the prawns, keeping the head and tail intact.
  13. Once the sauce has reached the desired thickness, add the prawns.
  14. If the sauce has cooled down, reheat it to a simmer.
  15. Allow the prawns to cook in the sauce for around 5 minutes.
  16. Stir in the feta cheese to the saucepan.
  17. Take the saucepan off the heat.
  18. Let the mixture rest until the cheese begins to melt.
  19. Serve the dish warm accompanied by slices of crusty bread.
  20. Optionally, to create a pasta sauce, mix in a few tablespoons of stock or passata.
  21. After adding the feta, combine the pasta with the sauce and serve.
