Ingredients
- 4 pcs mackerel
- 18 pcs red chilli
- 1 pcs inch ginger
- 8 pcs garlic
- 1.5 g peppers
- 1 g cumin
- 0.5 g turmeric
- 1 pcs cinnamon stick
- 2 tsp cardamom
- 1 g sugar
- 2 pcs marble sized tamarind ball
- 2.5 ml vinegar
- 1 pcs for frying oil
Instructions
- Place the spices, ginger, garlic, tamarind pulp and Kashmiri chilies in vinegar to soak—do not add any oil.
- Stir in sugar, salt and turmeric into the soaked ingredients.
- Mix well to combine and let the mixture marinate for 35–40 minutes.
- Grind the marinated mixture to a smooth, soft paste, adding a little more vinegar only if needed so it forms a thick paste that will adhere to the fish.
- Rinse the mackerel, make a lengthwise slit along the belly and score the top with several shallow cuts.
- Pack the thick masala into the cavity and into the scored cuts, then smear the paste all over the fish.
- Allow the stuffed fish to rest and marinate for 30 minutes.
- Pour oil into a shallow frying pan and heat it until it is very hot, ready for shallow-frying.
- Shallow-fry the stuffed mackerel, turning occasionally, until both sides are golden brown.
- Serve the recheado mackerel hot alongside salad, lime wedges, rice and curry.
