Ingredients
- 250 g self-raising flour
- 250 g dark brown soft sugar
- 250 ml milk
- 4 g sugar
- 1 g ginger
- 0.5 tsp cardamom
- 1 tsp baking powder
- 1 g salt
Instructions
- Set the oven to 160°C (320°F) to preheat.
- Prepare a cake pan by lining it with parchment paper, then set it aside.
- Combine all the dry ingredients in a large bowl and stir to blend.
- Put the milk into a small saucepan and warm it until it is just below boiling.
- Gradually add the hot milk to the dry mixture while whisking, mixing only until the batter is smooth and just combined—avoid overmixing.
- Transfer the batter to the prepared cake pan and level the surface.
- Evenly scatter pearl sugar over the top of the batter.
- Bake in the preheated oven for about 1 hour, beginning to check for doneness at 50 minutes.
- Insert a cake tester or skewer into the center; if it comes out clean the cake is ready, if not return it to the oven for a few more minutes and test again.
