Easy Salmon Nigiri

  1. Boil 2 cups of rice until cooked. Ideally use a rice cooker but a pan and drain will work too. Once cooked, add 1 tablespoon of sugar and 1 tablespoon of rice vinegar. Allow rice to cool for 30 mins
  2. With wet hands, squash rice into 8cm long rectangles. Make as many as you can.
  3. Put little wasabi on the rice (or use horseradish) with a knife.
  4. on each nigiri piece, put a line of mayonnaise then a generous slice of smoked salmon on top.
  5. Place the final nigiri on a plate and serve with wasabi and soy sauce.
