  1. Prepare the noodles as directed on the package.
  2. Rinse the cooked noodles under cold water.
  3. Thoroughly drain the noodles.
  4. Pour the stock into a large saucepan.
  5. Mix in the curry paste, lime leaves, fish sauce, and 250ml of cold water.
  6. Heat the mixture until it starts to simmer.
  7. Allow it to cook for 5 minutes.
  8. Chop the fish into approximately 3cm cubes.
  9. Incorporate the fish into the saucepan.
  10. Bring the mixture back to a simmer.
  11. Cook for 2 minutes without a lid.
  12. Add the noodles, prawns, and pak choi to the pan.
  13. Simmer for 2-3 minutes or until the fish and prawns are cooked through.
  14. Serve the dish in bowls garnished with coriander.
