Thai-style fish broth with greens

Ingredients
- 100 g brown rice noodle
- 500 g chicken stock
- 1 tbsp thai red curry paste
- 4 pcs lime leaves
- 1 ml fish sauce
- 200 g white fish
- 100 g king prawns
- 2 g pak choi
- 1 g coriander leaves
Instructions
- Prepare the noodles as directed on the package.
- Rinse the cooked noodles under cold water.
- Thoroughly drain the noodles.
- Pour the stock into a large saucepan.
- Mix in the curry paste, lime leaves, fish sauce, and 250ml of cold water.
- Heat the mixture until it starts to simmer.
- Allow it to cook for 5 minutes.
- Chop the fish into approximately 3cm cubes.
- Incorporate the fish into the saucepan.
- Bring the mixture back to a simmer.
- Cook for 2 minutes without a lid.
- Add the noodles, prawns, and pak choi to the pan.
- Simmer for 2-3 minutes or until the fish and prawns are cooked through.
- Serve the dish in bowls garnished with coriander.
