Ingredients
- 12 pcs chicken wings
- 2 pcs garlic
- 1 pcs zest and juice of 1 lemon
- 1 tsp cumin seeds
- 2 g olive oil
- 1 ml honey
Instructions
- Using sharp kitchen scissors, cut each wing through the joint at the knuckle to separate it into two pieces.
- Combine the garlic, lemon zest, lemon juice, ground cumin, olive oil and a generous pinch of salt and pepper in a bowl.
- Add the chicken wings to the bowl with the marinade and toss well so each piece is evenly coated.
- Cover and chill the wings in the refrigerator to marinate for at least 1 hour, or ideally overnight.
- Preheat the oven to 200°C (180°C fan/gas 6), or fire up and heat an outdoor barbecue.
- Place the wings on a baking tray or directly on the barbecue and cook: in the oven for 45–50 minutes until crisp, or on the barbecue for roughly 20 minutes.
- During the last 10 minutes of cooking, drizzle the wings with honey and return them to the heat until they are sticky and glazed.
- Transfer the wings to a platter, offer plenty of paper napkins, and serve with small bowls of olives, pistachios or almonds, dates, pickled chillies and flatbreads on the side.
