Walnut, date & honey cake

Ingredients
- 225 g self-raising flour
- 0.5 tsp cinnamon
- 175 g butter
- 100 g muscovado sugar
- 3 ml honey
- 2 pcs eggs
- 2 pcs banana
- 100 g dates
- 50 g walnuts
Instructions
- Begin by setting your oven to 160C, Gas mark 3, or 140C for a fan oven.
- Prepare a 900g/2lb loaf tin by lining the bottom and the longer sides with greaseproof paper.
- Apply butter to both the tin and the greaseproof paper.
- In a large mixing bowl, combine the flour, cinnamon, butter, sugar, 2 tablespoons of honey, and the eggs.
- Mash the bananas until smooth.
- Using kitchen scissors, chop the dates into small pieces.
- Incorporate the mashed bananas and chopped dates into the bowl with the other ingredients.
- Mix the ingredients thoroughly for 2-3 minutes with a wooden spoon or hand-held mixer until well combined.
- Transfer the mixture into the prepared tin and smooth the surface.
- Sprinkle walnut pieces evenly over the surface of the mixture.
- Place the tin in the oven and bake for 1 hour.
- Gently press down on the top of the loaf to see if it feels firm.
- If it’s still soft, continue baking for an additional 10 minutes.
- Allow the loaf to cool for 15 minutes.
- Using the greaseproof paper, carefully lift the loaf out of the tin.
- Once the loaf has cooled completely, drizzle the remaining honey on top.
- Slice the loaf into thick pieces.
